Vegetable paneer uthappam is our anytime-go-to-snack, along with being an excellent and healthy lunch-box addition. It is a yummy, nutritious and wholesome breakfast.
Traditionally, in India, uthappams are served as a breakfast dish, accompanied with coconut chutney. It is almost a full balanced meal as it has lentils, rice, veggies and paneer. They are soft and savoury, topped with freshly chopped veggies, paneer, chilies and coriander.

Prep time: 5-7 mins if you have pre-made dosa batter.
Cook time: 10 mins
Serves: 3 people approx.
If you have pre-made dosa batter (soaked, blended and fermented rice and lentil batter) ready at home, these uthappams are ready in no time. You can also easily buy pre-made batter from most Indian grocery stores these days. They don’t have any preservatives!
Ingredients:
- 2-3 cups dosa batter (1 cup = 250 ml)
- 1 cup chopped veggies: carrot, onion, tomato – or whatever you have in the fridge, like capsicum, zucchini, spinach, etc
- ½ cup paneer (cottage cheese) grated
- Optional: 2 green chilies finely chopped
- Optional: 2 tablespoon coriander leaves finely chopped. If you don’t have coriander, please don’t put off making it. While coriander makes it look beautiful, it will still taste yum without it.
- Olive oil
- Just over 1/2 tsp salt
Instructions:
- In a bowl, mix veggies, coriander, chillies and paneer
- Heat a pan/tawa on medium flame. Add a little oil and pour a ladleful of the batter. Spread evenly slightly thick.
- Sprinkle veggie-paneer mixture topping on uthappam.
- Add oil around the edges and close lid.
- Cook for 1-2 minutes till base is brown.
- After a minute or two, flip uttapam and let it cook till onions are caramelised and crisp.
- Remove and transfer to a serving plate.
- Serve with coriander or coconut chutney and/or sambhar.
